You can’t, generally. And it depends on what OS.
In macOS, you can somewhat mount it and it should prompt you on both Mac and iPhone to “trust” and then it shows up on Finder. You’re somewhat limited on what you can transfer/see in Mac when “mounting” an iPhone. It’s not like Android at all. Music is managed in iTunes/Music app. You can and should use Airplay to send stuff to and from the iPhone and other Apple devices, including Macs.
It asks to trust on Windows too, but everything has to go through iTunes/Apple Music. Though I do seem to remember there being something that showed up in This PC but I don’t have a Windows computer anymore to remember what that was or what it did.
iPhones do not sync at all with Linux as far as I can tell. I’ve tried looking for something but not found anything.
There are apps for the iPhone that do create a USB like “device” when mounting. I have used “USB Disk SE, File Manager” years ago to do this which may be something you’d use for this purpose. But it’s been a minute, so unsure on its current status and new updates that may have changed functionality.
I have tried KDE Connect recently with my Mac/Linux and iPhone but it’s not connected and I didn’t try any further since I have Airplay instead.
You can use a flash drive but the flash drive must be formatted before inserting into the iPhone or else it won’t read it at all. iPhones cannot format, as far as I can tell. Once formatted, insert it into the iPhone (I have an iPhone 15, so I can use USB type C natively) and then open the Files app and it will show up on the left side. You can move and copy files to and from that to share with a computer too. That’s the way I mostly do it when I want to transfer.
Either that or use iCloud which can be used on both Macs and Windows in an app to transfer to and from iPhones (and other Apple devices like an iPad).
